Protein Packed Paleo Coconut Flour Pancakes

Hello there! Today I am going to be sharing the recipe for protein packed paleo coconut flour pancakes. They are legit 🔥

These pancakes are not only delicious and nourishing, but they are so quick and easy to make. 

Recipe (Makes 1 single serving) 

1 ripe banana 🍌 

1 tbsp organic coconut flour 

1/4 tsp organic baking powder 

1 tsp organic vanilla extract 

2 organic cage free eggs 

Avocado oil cooking spray to coat the pan

Toppings shown above 

Mixed berries and a fig with a splash of Rose Water and a dash of cinnamon 

Method 

In one bowl, mash the banana 🍌 and then add in the two eggs and the vanilla.

Then, in a separate bowl add the dry ingredients and mix those together. Combine both the wet and dry ingredients together and put about 1/3 cup of batter at a time onto the avocado oil or coconut oil sprayed pan. 

Flip those babies over when they are golden brown.

For me personally, I don’t consume any added sugars. If I wanted my pancakes to taste a little more sweet since I do not add any syrup, I sometimes put some organic canned peaches in 100% fruit juice on top. The fruit juice acts like syrup but tastes way better and is full of vitamin C. Date syrup is another awesome option. 

If you choose to consume sugar but want a healthier option, I recommend honey or coconut nectar.

Most times I am more than satisfied with just some rose water, spices and fresh berries on top ! 😋

Why are these pancakes better than your average pancake mix? 

The average store bought pancake mix is packed with sodium, preservatives, and bleached flour. All of these ingredients can lead to inflammation, high blood pressure, skin breakouts, and so much more. This forces our bodies to work harder in order to get rid of these toxins. Instead, help your body get stronger by feeding it foods that aid in detoxification and growth. 

This recipe is packed with protein for hair, skin, nails, and muscle growth. 

Coconut flour boasts a wide range of benefits:

  • High in medium chain fatty acids which help to speed up metabolism, energize the body, and regulate blood sugar levels 
  • Has the ability to lower the bad LDL cholesterol 
  • Packed with fiber. Fiber is not digested, but rather passes through the digestive system and brings toxins along with it. This is why coconut flour is detoxifying. 
  • Gluten free
  • Unlike wheat and other grains, coconut flour does not contain phytic acid, a toxin that inhibits nutrients from being absorbed by the body. Instead, it is full of trace minerals that are easily absorbed. 

The benefits of coconut flour, bananas, eggs, and rose water are so numerous.

Red, White, and Blue Bowl of Delectable Oatmeal

Hello there! Welcome to my first official Got to Glow blog post.

For Memorial Day, I whipped up a patriotic and vibrant bowl of delicious oatmeal. It was so good, simple, quick, and absolutely delicious. This bowl is great for any time of the year. Let’s glow ! 

  • 1 packet of organic original Quaker Oats 
  • 1 cup of The New Barn unsweetened almond milk 
  • 1 tsp organic Nature’s Promise Vanilla Extract
  • 1/2 cup organic blueberries 
  • Dash of pink Himalayan sea salt
  • 1 level scoop of Vital Proteins Collagen
  • 1/2 of a ripe banana mashed for sweetness

Add all of the above ingredients, including the blueberries, in a pot or sauce pan on the stove and cook for about 5 minutes on medium heat while stirring. 

The blueberries will burst, giving the oats that beautiful, vibrant periwinkle blue color. 

I topped the bowl of with a splash of Sadaf Rose Water, a handful of organic raspberries, and some organic unsweetened shredded coconut. Voila! You have a bowl of scrumptious nutrition.

What are the health benefits that come with eating this for breakfast?

Oats

  • Oats contain soluble fiber in them which have been correlated to lower risk of coronary artery disease.
  • They are full of manganese, selenium, phosphorus, fiber, magnesium, and zinc. Oats are also rich in carotenoids.
  • They contain a type of fiber known as beta glucan, which has been found to lower cholesterol.
  • The beta glucan in oats has also been found to boost the immune system’s ability to fight off and prevent bacterial infection.
  • They stop your hair from falling out because they are rich in vitamins and minerals that support hair growth.
  • Protect against cancer 

Collagen 

  • Improves circulation by rebuilding connective tissue to strength skin, hair, and joints, and structure of bones, tendons, and ligaments
  • Relieve arthritis pain
  • Reduce wrinkles 
  • Improve gut health (most health problems start in your gut!)

Overall, collagen gives you gorgeous glowing skin and strong joints, while improving your digestion and metabolism

Berries

  • Rich in vitamin C and antioxidants to strengthen immune system, prevent cancer
  • Full of fiber to keep you full and improve gut health
  • Improves binocular vision 
  • Anthocyanins are what give berries their gorgeous color. This pigment also is a powerful antioxidant that protects skin from damage and reduces wrinkles!

Vanilla extract 

  • Natural vanilla extract has antioxidants to ward off toxins in the body.
  • Vanillin, the natural antioxidant in vanilla that gives it that delectable aroma, has been found to be antionflammatory. 
  • Good source of B vitamins to give you glowing skin

Himalayan sea salt 

  • The minerals present balance electrolytes, strengthen bones, aid metabolism function, improve hydration, aid in nutrient absorption, and more

Almond milk 

  • Almond milk has riboflavin, a form of vitamin B that works with iron and other vitamins and minerals to aid muscle strength and growth.
  • Almond milk is high in vitamin E which gives skin a healthy complexion
  • Strengthens immunity
  • Protects kidney health
  • Reduce risk of osteoporosis 

Coconut 

  • Healthy fats- coconut oil has been found to boost good cholesterol and has antifungal properties
  • Manganese, selenium, copper, iron

The next time you’re craving something sweet, make yourself a bowl of delicious oatmeal! It can satisfy those cravings, boost immunity, protect you from cancer, and give you a glowing complexion. Food really is medicine.. But don’t forget, the best cure is prevention! 💖
